Glazed Pineapple Cookies

1 - 9oz can crushed pineapple (in heavy syrup for best flavor)
2 c. flour
1 1/2 t. baking powder
1/4 t. baking soda
1/4 t. salt
1/2 c. shortening
1 c. brown sugar
1 egg
1 t. vanilla

Drain pineapple, reserving liquid. Sift flour with baking powder, baking soda & salt; set aside.
In large bowl, cream shortening with sugar until light. Beat in egg & vanilla until light & fluffy. Add drained pineapple; mix well.
Add flour mixture, mix in until well combined. Chill dough.
Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 400 degrees 8-10 minutes, or until slightly golden brown. Remove to wire rack. Cool partially.

Meanwhile make glaze:
1 1/2 c. powdered sugar
3-4 T. reserved pineapple liquid
Combine powdered sugar with pineapple liquid. Stir until smooth. Spread tops of cookies with glaze while they're still slightly warm. The glaze will drip down the sides of the cookies so place on a wire rack or onto wax paper. Cool & let "dry" before storing.

Description:  I've been making these for over 40 years after finding the recipe in either the Electric Farmer or Nebraska Farmer magazine when I was in junior high. They're an extra special cookie that everybody always requests from me. They're best fresh as I don't like them as well if frozen or stored for very long. But that's never much of a problem!
